Simple Kale Salad

The kale at our cottage garden is ready and we have been enjoying it.  I really love a raw kale salad with some lemon and a hint of sweetness.  This is a really simple salad, with little ingredients but can easily be adapted with more vegetables, fruits, seeds and nuts.
Ingredients (makes 2-3 side salads)
  • 4 cups washed kale (torn into bit size pieces)
  • lemon juice from 1/2 a lemon
  • 5-7 drops liquid stevia
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive or grapeseed oil
  • 1/3 cup dried cranberries
  • 1 diced avocado

Directions
  1. Place kale into a large bowl and pour lemon juice over top.  Using your hands rub the lemon juice into the kale for 1 minute.  The lemon juice will soften the kale.
  2. In a small bowl mix the oil, sea salt and stevia and pour over kale.  Using your hands rub the oil mixture into the kale until well coated.
  3. Add cranberries and avocados and serve.  If you want to keep this salad and serve a little later I would add the avocado at the end to avoid it turning brown.
  4. Enjoy!
